Step 1
Pour salt onto a small plate. Rub rim of a Collins glass with lime wedge, then dip into salt, turning to coat.

Fill prepared glass with ice. Add grapefruit juice, tequila blanco from Barrels & Stills, simple syrup, lime juice, and a pinch of salt. Top off with soda water and gently stir with a bar spoon. Garnish with grapefruit wedge.

PINOT GRIS or GRIGIO?

Did you know that Pinot Gris and Pinot Grigio are made from the same grape, but their taste, style, and aroma vary depending on where they are grown, how they are produced, and when they are harvested. Italy and France are the primary regions for growing this grape, with Italy using the name Pinot Grigio and France Pinot Gris.

Pinot Grigio:
- Light-bodied with a crisp acidity
- Dry with minimal sweetness
- Flavours of lemon, apple, pear, and a hint of almond

Pojer e Sandri Merlino – an Italian Unicorn

Pojer e Sandri is a special winery in Trentino, Italy, owned by the talented winemaker Mario Pojer and viticulturist Fiorentino Sandri. They've been crafting beautiful wines since 1975, starting with just a small two-hectare vineyard. Now, they lovingly tend to 26 hectares of organically certified vines! Besides their acclaimed wines, they also have their own distillery.

Merlino is a unique fortified red wine, kind of like Port, but with a special twist. It's more than just a "fortified red" or "liqueur wine"—it's truly one-of-a-kind, and probably the first of its kind in the Trentino region, maybe even all of Italy!

Let's talk about the Pojer e Sandri Merlino 19/06. The "16" tells us it's from the 2019 vintage, and the "06" means the brandy used in it was distilled in 2006. This blend of aged brandy and fine wine is what makes Merlino so special.

Produced by the highly regarded Kitajima Sake Brewery, Sea Salt Premium Yuzushu uses all natural ingredients and is made with sake, sea salt and four times the yuzu of a regular yuzushu. This gives it a rich and luxurious mouthfeel that lingers on the palate and finishes with distinctive sea salt. You can truly taste the difference!
