The Christmas season will soon be upon us, and we all know that means three things: family, food and festive drinks.
No Christmas is complete without festive cocktails. Most of the focus around this time of year is on the fantastic Christmas food recipes; however, the right cocktail can get everyone into the Christmas spirit. I wanted to introduce you to my favourite gin cocktails that I like to serve over this season, and you can try these at home.

Garden Sour
50ml Lind & Lime
20ml Lime juice
10ml sugar syrup
100ml green tea (cooled)
6 mint leaves
6 x cucumber dice
Juice your lime and make your simple syrup by adding sugar & got water 1:1 by weight.
Add all ingredients to a cocktail tin. Add ice and shake well. Strain over ice into a glass and garnish with a cucumber.

Shorefront Martini
35ml Lind & Lime
35ml Manzanilla sherry
5ml sugar syrup
Make your simple syrup by adding sugar & got water 1:1 by weight.
Add 50g sea asparagus (washed) to 250ml Manzanilla Sherry and leave overnight to infuse. Strain well. For amore intense infusion crush the samphire. Add all ingredients and ice to a mixing glass and stir till chilled.
Strain into a cocktail glass and garnish with a sea asparagus sprig & lime zest.

Hedgerow Fizz
50ml Lind & Lime gin
20ml Lime juice
5ml simple syrup
Bar spoon of rhubarb & strawberry conserve
100ml Fever tree rhubarb & raspberry tonic
Peel and juice your lime. For the simple syrup add sugar & hot water 1:1 by weight.
Add all ingredients except the tonic to a cocktail tin. Shake without ice. Add ice and shake again..vigorously.
Strain into a tall glass and add your tonic. Garnish with lime peel.
