Soft straw yellow color with fine and persistent perlage. Fruity notes of green apples and subtly aromatic, while the taste is lively, fresh and soft, characteristic qualities of sparkling wine. After destemming, the grapes are gently pressed. The first fermentation occurs in stainless steel for about 8-10 days at controlled temperature. After this period of natural decantation, the second fermentation begins with the adding of yeasts and continues for about 60 days inside a closed pressurized tank, until the pressure reaches about 6 atm and the desired softness is achieved.
