Patrick Sullivan 'Flint' Chardonnay. Mount Gambier, straddling the South Australian and Victorian border, is one of Australia’s coolest and most distinctive wine regions. Its soils were formed through the interaction of volcanic activity and underlying limestone, when around 6,000 years ago, steam-driven eruptions forced volcanic ash and debris up through the porous limestone. The resulting mix of basalt, volcanic tuff, and calcium carbonate-rich ash created fertile, well-draining soils, while the region’s dramatic landscape of sinkholes and crater lakes tells the story of these ancient events. Combined with the cooling influence of the nearby Southern Ocean, these conditions produce chardonnay of precision and tension, with bright citrus and stone-fruit flavours underpinned by a chalky, mineral edge. The result is an elegant, finely balanced style that captures both the limestone purity and volcanic energy of Mount Gambier’s terroir.
