The grapes for this wine come from south-facing, steep terraces in the town of Stein. The majority of the Riesling grapes (85%) were harvested from the Pfaffenberg vineyard. This Riesling Auslese was made from a selection of botrytized grapes. In other words, the grapes were affected by noble rot, which caused the skins of the berries to become permeable. In this way, some of the liquid from the berry evaporates and the sugar and acid in the berry concentrate.
