Prepare to be surprised. While you won't find any whales in Japan's Lake Biwa, you will find a sake with a presence just as magnificent and awe-inspiring. This isn't just any sake; it's a Namazake Genshu, which means it's unpasteurised and undiluted, resulting in a brew that's both raw and powerful. With a striking 20% ABV, it's certainly a strong contender, but don't let that intimidate you. When served chilled or on the rocks, its complex, sophisticated flavours truly come to life.

The aroma is an elegant dance of notes. You might first catch a whiff of fresh sugar snap peas, a subtle hint of lime zest, and green melon, which then gives way to earthier tones of mushroom and rice bran. On the palate, this sake reveals its layers as it warms. While initially restrained, it develops into a delightful mix of wheat and grain, balanced by notes of pithy green fruit. The finish is where its robust character truly shines, with a beautiful depth of savoury notes that complement its lean fruit profile.
